Ever heard of the city Lodi? Its about 40 minutes north of Modesto, California. There are some amazing vineyards and lots of people go skydiving out there. Both my husband and I served as missionaries there at different times. When we returned home and were reminiscing, both of us remembered the amazing tortas we ate at Super Tortas. It is a mom n’ pop diner kind of a place. The owners are from Mexico and the nicest people. Each week they would treat us to free tortas and horchata (yummy mexican drink) for FREEEEE!
In Mexico and Ecuador (where my husband is from), the word torta means sandwich, however in Chile, where my mother in law is from, the word torta means cake. These tortas may as well be cake – they are seriously mouthwateringly delicious! I decided to make my own version of the torta, and tried to make it a bit healthier too. This is one of my husbands and my favorite dinners. Add some chips and fruit and we are a couple of happy campers!
I like to use coconut oil when frying up my chicken. Its nice that its a bit healthier, and the husband likes the flavor when I use it . Throw about 1/2 TBS in a frying pan. We are not huge fans of thick cut meat so I cut the two chicken breasts lengthwise so I have a total of 4 pieces of chicken. I use Weber Kick’n Chicken Seasoning to give it a nice bit of flavor. Just sprinkle a bit on each side of the chicken breast.
Allow the chicken to cook on medium for about 7 min each side. While the chicken is cooking, I like to cut up all the veggies -we like tomatoes, red onion, avocado, and spinach.
Once the chicken looks cooked through, crank up the heat to high and fry the chicken for about 2 minutes on each side to brown it and get a bit crisp.
Once the chicken is grilled to your liking, remove from heat to top your torta with all the colorful veggies. *I purchase my torta buns at costco 😉 We love ours with Mayo and Sweet Baby Ray’s BBQ Sauce!

Grilled Chicken Torta
Delicious torta bun topped with seasoned grilled chicken, tomatoes, red onion, avocado, and spinach. Add mayo and bbq sauce if desired.

- 4 torta buns ( I buy my torta buns at Costco)
- 2 chicken breasts
- 1 TBS coconut oil
- 1 avocado sliced
- 1 tomato sliced
- 1/4 red onion sliced thinly
- 1 c spinach
- Sweet Baby Rays BBQ Sauce
Put about a table spoon of coconut oil in large frying pan and turn the on the oven to medium heat.
Cut the 2 chicken breasts lengthwise so you have 4 thin cut pieces of chicken. Add to the oil.
Sprinkle a bit of seasoning on both sides of the chicken. Allow chicken to cook about 5 -7 minutes and flip, cook the chicken to cook another 5 -7 minutes on the other side.
While the chicken is cooking, cut and prepare the tomatoes, avocado, red onion, and spinach.
Once the chicken looks cooked evenly on each side, crank up the heat to high and watch it closely, cooking each side 2-3 more minutes. This will brown it and get a bit crisp. Remove from heat.
Cut torta buns in half lengthwise and spread mayo on each side. Add the chicken and all the fixings and top with the other side of bun. Enjoy!
